I have been a sommelier for over 20 years. My journey started in Burgundy, at L’HOSTELLERIE de LEVERNOIS**, BEAUNE.This is where I did my first encounters, my first revelations. I learnt from those winegrowers, who transmit this ancestral know how, timeless traditions, and unique heritage.
Then my journey lead me to one of the greatest Parisian institutions: LA TOUR D'ARGENT, iconic cellar where mythical vintage bottles take you back in time.
After that, I spent 8 years with Monsieur Alain SENDERENS, at LUCAS-CARTON*** restaurant, in PARIS. This visionary chef allowed me to discover the food and wine-pairing universe.
During 9 years, from 2006 to 2015, I took part of ASTRANCE*** PARIS restaurant project, with a total freedom of expression, in Pascal Barbot and Christophe Rohat’s team.
Since I arrived in Japan in October 2015, I have been in touch with wine and gastronomy actors: sommeliers, amateurs, wine tasters, chefs, and journalists…
Gastronome, I enjoy sharing my passion and my enthusiasm. Obsessed with food & wine pairing, I love to relentlessly propose different gastronomic themes. I am committed to make wine alive through its different grape varieties, its areas, its methods and above all, the men and women who are making the wine.
